balsamico


 

originating in modena, italy, our balsamico is made from 80% trebbiani and 20% lambrusco grapes, cooked down and reduced for 20 hours, then aged for 8 years in wooden barrels.  

this viscous, luscious liquid is created for “finishing” foods. dribble it on everything from cheese to meat to vegetables to fruit (watermelon, trust me on this.) to gelato.  but, my favorite way to enjoy our balsamico is simply from a spoon. 

in italy, balsamico is also considered a digestive. 

I’ve added drops to champagne and prosecco for an impromptu italian cocktail.
